Part of Italy's ongoing "Flavours of Italy" series, this issue celebrates the culinary traditions of Emilia-Romagna — a region whose food appellations are among the most legally protected in Europe. Lambrusco received DOC status as far back as 1970, while tortellini's precise recipe is literally on file with the Bologna Chamber of Commerce, deposited there in 1974 by the Italian Culinary Academy to settle, once and for all, arguments over filling ratios.
