Part of Italy's ongoing "Flavours of Italy" collector series, this issue highlights Molise — Italy's second-smallest region and one that has spent decades fighting for recognition as distinct from neighboring Abruzzo, from which it was separated only in 1963. Tintilia is a red grape variety nearly extinct by the 1980s, surviving in Molise almost by accident before a handful of local producers pushed for its DOC recognition in 2011. Caciocavallo Silano, the paired cheese, carries a DOP designation dating to 1996.
